What Shall We Do With All This Leftover Ham?

Of course, with the temperature about 70, it doesn't feel a lot like winter!

After Christmas I told Daddy to get us a big ham to cook. They were only 69 cents a pound, so it seemed like a good deal. The problem is he bought a twelve pound ham! I have to say, it was pretty good the first night with Mommy's biscuits. However, after a week of the stuff, I'm tired of it!!! Daddy didn't produce any suggestions from anyone about a good recipe calling for ham, except for Split Pea Soup. We were just about to let Heather have a feast when Daddy came up with an idea for a soup. This actually turned out pretty good, so, since someone suggested I blog about it.....


Baked Potato Soup with HAM!

1/4 Cup Butter
1 Tablespoon Bacon Fat (optional, but increase butter to 1/3 cup if omitted)
1 Large Sweet Onion (Diced)
1 Clove Garlic (mashed)
1/3 Cup Flour
3 Cups Whole Milk
1 Tablespoon Top Secret Ingredient
3 Cups Water (more or less to suit your fancy)
4 Pounds Baked Potatoes (peeled and cubed)
1 Cup Sharp Cheddar Cheese (grated)
8 Ounces Sour Cream
2 Cups Cooked Ham (Cubed)
1 Teaspoon Parsley
Salt and Pepper

In a large pot, melt the butter and bacon fat.
Add the diced onion, garlic and some salt.
Cook over medium heat until soft.
Stir in the flour and cook another minute or so.
Add the milk and Top Secret Ingredient.
Bring mixture to a boil, stirring frequently.
Reduce the heat to low.
Using the stick blender, mix until smooth.
Add as much water as it takes to get to the consistency you like.
Return to a boil, stirring frequently, then reduce to low.
Add the potatoes, ham, cheese, parsley, and sour cream.
Stir until well mixed, being careful not to break up the potatoes.
Add salt and pepper to adjust to taste.
Makes a lot!
